3 Healthy Appetizers for Spring Gatherings

With spring just around the corner, it’s time to start thinking about those great barbecue gatherings with family and friends. While those fun days with warm nights may be the perfect excuse to indulge, it’s important to stay motivated to be healthy and even encourage others to be healthy, too. So if you’re going to plan a get-together, try these great appetizers that are just as delicious as they are healthy!


Zucchini Chips

A bowl of chips is the easiest way to satisfy some tummies, but not the healthiest option. These zucchini chips are so good and a much healthier option than potato chips.


1 lb thin sliced zucchini

¼ tsp salt

¼ tsp pepper

½ tsp olive oil

1 tsp apple cider vinegar


Mix all ingredients together except the zucchini.

Slice the zucchinis thin then dip into the mixture.

Arrange the zucchini slices on dehydrator trays and dehydrate at 135 degrees for 5-6 hours or until crispy.

Watermelon “Pizza”

Skip the boring salad and unhealthy pizza and try this delicious recipe! You’ll be surprised by the yummy taste.


1 round slice of watermelon

3 tbsps balsamic vinegar or glaze

¼ cup toasted almonds

1 bunch basil leaves, diced finely

¼ cup feta cheese


Take watermelon round and assemble all toppings onto it then drizzle with some of the balsamic vinegar or glaze.

Quinoa Pizza Bites

If you are craving pizza, this alternative is the perfect choice! It’s the perfect appetizer but also filling enough to have a few pieces for your meal, after the delicious watermelon pizza. Yum!


1 cup cooked quinoa

½ cup shredded cheese

1 egg

½ tsp salt

½ tsp ground pepper

3 tbsps marinara or pizza sauce (look for sauce that has no added sugar)

½ tsp garlic powder or use garlic cloves

3 tsps Italian seasoning

½ tsp crushed red pepper flakes

Marinara or pizza sauce for dipping (no added sugar)


Cook quinoa, which requires you to wash then bring to a boil in a pot with 1 ¼ cups of water, lower heat and cook for 15 minutes.

Preheat oven to 400 degrees and grease a 12 mini muffin tin pan.

Mix all ingredients together except the extra marinara/pizza sauce for dipping and put 2 tbsps into each muffin tin. Make sure to pack it in there well.

Bake for 12-15 minutes, remove and add extra cheese if you’d like.

Serve with marinara or pizza sauce for dipping.
